Research Interests
My research program is in two main areas: AI applications in food systems - nondestructive testing methods development for foods, application of sensor data and machine learning to predict food quality and classify them on the basis of safety and quality; and sustainable food processing - alternative grains/proteins, food waste valorization, molecular modeling in food systems, and extrusion technology for value addition.
