Description
This project will address the potential to develop frozen and value-added blueberry food products utilizing Kentucky
grown blueberries and to market these to the Kentucky School Lunch Program as well as directly to consumers through
retail groceries and local restaurants. Focus groups of industry experts, public school menu planners and Kentucky Public
School Lunch program administrators will provide information to help guide product development and packaging design
as well as economic assessment of product supply and consumer demand. Product sensory analysis and economic choice
experiments will also allow rigorous assessment of pilot products.
