Description

Conduct a literature review and conssnsus conference for the applicaiton of standardized controls and antimicrobial interventions that could be applied to small and very small meat processing plants. Conduct in plant studies in several difference plants to evaluate plant to plant variation in application of beef slaughter and processing controls and antimicrobial interventions (hot water) and its possible impact on food safety and HACCP. Establish peer reviewed articles that detail standard procedures.
