Description
The UK Food Systems Innovation Center will provide essential product development research to Kentucky food processors in a way that makes such research affordable and easier to implement. The results of this research can provide Kentucky's family farms, small, medium, and large food procesors with valuable reserach-based information about their products safety, shelf-life, and nutritional content, as well as helpful consumer marketing and economic information that can be used for a variety of product development strategies and business decisions. The objectives will be accomplished through a multi-disciplinary approach that employs research expertise of individuals from the Departments of Animal and Food Science, Agricultural Economics, Biosystems and Agricultural Engineering, Nutrition and Food Science and Horticulture.
