This project will increase demand for Kentucky fruits, vegetables, nuts, and herbs by increasing child and adult nutrition knowledge and consumption of specialty crops. The Plate it Up! Kentucky Proud project links the expertise of University of Kentucky faculty with nutrition students, Extension agents, and producers to market Kentucky specialty crops. We will maintain a consumer focus for this grant period with an emphasis on healthy and economical recipes prepared using small serving sizes appropriate for one or two adults and/or children. The project will develop, disseminate, and demonstrate new recipes featuring local seasonal specialty crops to market Kentucky foods as part of a healthy lifestyle
