UK NEP SNAP-Ed Abstract
The proposed 2026 project aims to address the nutrition education and obesity prevention
needs of limited-resource populations across the Commonwealth of Kentucky. The 2026
plan includes three proposed projects from the University of Kentucky. These projects will
employ a comprehensive approach integrating direct education, indirect intervention
strategies, and advocacy for evidence-based policy, systems, and environmental (PSE)
changes to improve dietary behaviors and increase physical activity levels among target
populations. All 120 counties in Kentucky will be served through these multifaceted efforts.
The University of Kentucky Nutrition Education Program (UK NEP) will continue to utilize the
social ecological model to inform program design and delivery. This model supports a
layered strategy that addresses determinants of health at the individual, interpersonal,
organizational, community, and societal levels, reinforcing sustainable behavior change
through systemic influence.
Consistent evaluation will provide data for curricula improvement, staff training, and field
implementation of the proposed projects.
