Abstract
Grain quality is becoming of ever-increasing importance in the grain industry. Quality deterioration of corn is caused principally during high-temperature drying. The moisture content and stress-crack distributions in a lot of corn are indicators of the quality of the drying process, and were measured at several elevator sites in three Midwestern States. The moisture variation was found to be lower in corn dried in mixed-flow dryers than in the other dryer types. The concurrent-flow and mixed-flow dryers produced corn with the fewest stress-cracked kernels. In each dryer type, the over-dried and under-dried kernels were most likely to be stress-cracked.
