Abstract

One strategy for increasing processing efficiency and revenues is to utilize streams that have typically been treated as a waste stream. A very common, underutilized waste stream in the dairy industry contains whey proteins. This overview presentation will showcase several approaches and technologies for processing whey proteins into value-added products.
